Knife Info 101-Advantages of a Sharp Knife
After years of honing my knife skills both on sharpening stones and in the kitchen, it has come to my realization that people have lost touch with the one tool that has been with mankind from the beginning, and Of course I’m talking about the knife. In the kitchen, in the camp, in survival the knife is something I am truly passionate for. From the way it is made, to the materials at its core I love to educate everyone that visits Kitchen Riddles about what is the most important tool in the kitchen, and how to maintain it.
This week I will be explaining why it is very important to keep that kitchen knife sharp and the benefits of doing so.
When I show people how sharp I can get a knife after sharpening a lot of reaction is “wow that is really sharp looks dangerous wouldn’t want to cut myself with that”. Of course none of us want to cut ourselves in the kitchen, but little do people realize that a sharp knife is much safer than a dull knife. The reason for this is that when using a sharp knife for preparation in the kitchen you have to apply much less pressure to the food product. On the other hand when using a dull knife you must apply much more pressure which can result in the knife slipping and striking your hand.
If you were to go to a steakhouse, a French bistro, or a reputable sushi restaurant time and time again the sharpest knifes will always be at the sushi restaurants. While this is not a fluke it is also the reason the best knifes in the world are from Japan. The main reason for these meticulously maintained knives is of course food quality. What most don’t realize is that the sharper the knife the less cell wall damage there will be to anything you are cutting whether it’s fruit, meat, or even bread. For example, when you order the salmon sashimi and it arrives beautifully presented, and tastes so fresh it is the end product of years of training and of course the use of properly maintained sushi knife.
And of course for me and I’m sure for many of you, a sharp knife is an absolute pleasure to use is the kitchen, Making food preparation safe, quick and results in a quality end product. This is why when a customer picks up the knife I have just sharpened for them, it satisfies me to provide them with a properly maintained tool us as people have been using for thousands of years for nourishing ourselves and the ones we care about.
